Watermelon is a cool, refreshing addition to any meal. These three recipes showcase summer’s best friend. Enjoy y’all!

WATERMELON SALADWLM - Food for Thought
Serves 4
2 cups of watermelon, seeded and cut into 2-inch cubes
4 oz. crumbled feta cheese
Coarsely ground black pepper, to taste
3 tablespoons of fresh mint, minced

In a medium sized bowl, add watermelon, feta, black pepper and mint. Gently toss to combine. Cover with plastic wrap and refrigerate until serving.

WATERMELON SLUSH
4 cups of watermelon, seeded and cut into 2-inch cubes
½ cup sugar
1 tablespoon fresh lime juice

Purée watermelon, sugar and lime juice in a food processor or blender. Pour mixture into a 12 x 9 baking pan. Cover and freeze until firm, approximately three hours. When ready to serve, remove from the freezer and use forks to “scrape” the granita. The icy flakes will have the consistency of a slushy snow cone.

WATERMELON MARTINI
Serves 2
2 cups of watermelon, seeded and cut into cubes
Simple syrup
4 ounces vodka

Purée watermelon in a food processor or blender until smooth. Pour pureed mixture through a fine mesh strainer. Use the back of a spoon to press the pulp so that you can extract as much juice as possible. Add simply syrup to taste to sweeten as needed. In a cocktail shaker, combine ice with watermelon juice and four ounces of vodka. Shake vigorously. Pour into martini glasses and garnish with a lime.
